Some people think tofu is always tasteless. That's not the case, as we show in this healthy and delicious recipe.
Lettuce Wrap Recipe
2 tsp. Canola Oil (divided into two parts)
2 tsp. Ginger
1 clove Fresh Garlic
4 oz. Extra Firm Tofu
1 Tbls. Low-Sodium Soy Sauce
½ cup Shitake Mushrooms
½ cup Carrots
½ cup Bean Sprouts
½ cup Scallions
1 tsp. Sesame Oil
4 ea. Boston Leaf Lettuce
2 Tbls. Peanuts
3 Tbls. Cilantro
½ tsp. Crushed Red Pepper
Method:1. Toss tofu with half of the canola oil, garlic, ginger and half of the soy sauce. Roast at 325 degrees for 15-20 minutes.
2. Heat the remaining oil in a sauté pan. Add carrots, mushrooms and sprouts and cook for 2-3 minutes until slightly soft. Then add scallions and remaining soy sauce and sesame oil.
3. Mix tofu with cooked vegetables in a bowl.
4. Divide mixture evenly into the lettuce leaves.
5. Top with peanuts, cilantro and crushed red pepper.
6. Fold in sides, role tightly and serve.
Ginger: Ginger eliminates gastro intestinal distress. It eliminates motion or sea sickness and is even more effective than Dramamine. Ginger also contains very potent anti-inflammatory compounds called gingerols which can assist those with arthritis.
Garlic: Garlic is known for its cold fighting abilities. It increases the potency of two important cells of the immune system: T-lymphocytes and macrophages. The immune boosting properties of garlic appear to be due to its sulfur-containing compounds, such as allicin and sulfides.
Mushrooms: Shiitakes have been used medicinally by the Chinese for 6000 years. Their active compound, lentinan, powers the immune system, promotes anticancer properties and lowers cholesterol. Mushrooms are also very high in iron, protein, dietary fiber and vitamin C.
Carrots: Carrots antioxidants help protect against cardiovascular disease and cancer. The beta-carotene in them promotes good vision (especially night vision) and protects against macular degeneration.
