Simple Sweet Crepe Recipe1 cup of unbleached white flour
1 cup of milk
2 eggs
2 tablespoons of melted butter
a pinch of sugar
a pinch of sea salt
(For a vegan option- milk: vanilla soymilk, eggs: Ener-G, butter: soy margarine)
Whisk ingredients together in a bowl, and then let the batter sit in the fridge for at least an hour. (You can also make the batter and let it sit overnight.) Whisk the batter again when you're ready to cook the crepes. Using a medium flame, heat your crepe pan or 8 to 12 inch skillet. Lightly brush the crepe pan with butter before pouring the batter. Pour about 1/4 cup of batter in the pan, and swirl the batter around the pan so that the bottom is thinly coated. When the edges start to peel away from the pan and the crepe becomes golden brown color, flip the crepe. (It’s easier to just use your fingers, rather than a spatula, just be quick about it!). When the crepe is done, put it on a plate and continue making crepes with the remaining batter. Top with fresh fruit toppings.
