Ingredients
12 oz Bittersweet Chocolate
11 oz Butter
8 Whole Eggs
5 Egg Yolks
1 Cup Sugar
4 oz Flour
Procedure
1. Melt the chocolate and the butter in a double boiler
2. Whip the eggs and sugar together until it doubles in volume
3. Slowly add chocolate to the eggs
4. Add the flour
5. Coat the tin cups with butter then dust with flour
6. Pour cake batter into the cups up to the rim stuff with ganache or whole chocolate
7. Bake at 350 degrees in convection oven for 12 minutes, or 18 minutes in conventional oven.
