Zabaglione Di Moscato
(Serves 4)
Ingredients:
4 Egg Yolks
1/2-Cup Vino Moscato
1/3-Cup Honey
Procedure:
Place all ingredients in stainless mixing bowl. Have a large pan of boiling water on the stove. Place the stainless bowl in the larger pan and start.
Whisking briskly,slowly add Moscato until mixture becomes creamy golden. Should coat a spoon. Serve in tall glasses and garnish with chocolate heart.
GNOCCHI FATTO IN CASA
House made Sweet Potato Gnocchi
Serves (4) ( 28 Gnocchi)
Ingredients:
2 Large Sweet Potatoes
3-4 Cops of flour 00’ Farina (or any Artisan flour)
Procedure:
Peel, boil & drain (PBD Method)
Pass potatoes through food mill. Mix flour until dough ball consistency. Roll each out into desired thickness and length. Cut into small cubes. Cut on slant to give bias appearance. Roll off fork. Why? Causes indentations that hold sauce. Boil in salt water until they rise to the top of the water. Drain immediately.
Sugo (sauce)
2 Tbs Extra virgin olive oil
1 Small onion minced
½ Cup Prosciutto Di Parma (shavings)
1 Cup fresh spinach
1 Cup fresh arugula
½ Cup Ricotta
1 ½ Tsp. fresh Thyme
Salt to taste
Saute onions in the olive oil until lightly caramelized. Add Gnocchi's, then prosciutto, spinach, arugula, ricotta, fresh thyme and salt to taste.
Saute at medium heat for about 6 minutes.
