For a unique alternative, top a grilled Meijer Chicken sausage (in a grilled whole grain roll) with Black Bean Mango Salsa:
Black Bean Mango Salsa- Serves 6
2-15 oz. cans black beans, rinsed and drained (NuValÒ score 82)
1 ½ cups corn (NuValÒ score 91) – thaw if frozen
½ green bell pepper, chopped (NuValÒ score 94)
½ red pepper, chopped (NuValÒ score 96)
4 green onions, chopped (NuValÒ score 100)
1 avocado, cubed (sprinkled with lime juice to prevent browning) (NuValÒ score 100)
1 mango, cubed (NuValÒ score 93)
2 tbsp. Meijer Extra Virgin Olive Oil (NuValÒ score 11)
2 tbsp. balsamic vinegar
Salt and pepper to taste
