(WXYZ) - Owner of Cafe Cortina Adrian Tonon introduces us to a home cooked Italian meal.

Here is the recipe for Pollo alla Griglia.

 

SERVES 4 :

• 1 whole chicken (Michigan Amish Free Range)

• 1 tablespoon coarse sea salt (Kosher salt will work fine)

• 10 sprigs parsley

• A 10-inch sprig of rosemary

• ½ lemon

• 2 cloves of garlic (finely minced)

• A quarter cup of Extra Virgin olive oil (Colavita)

• 1 tsp fresh ground black pepper (to desired taste)

 

1 brick wrapped in aluminum foil

 

Split the chicken up the breastbone, press flat, and fold the wings up behind its back.

Add all ingredients into a flat pan (set a bit of olive oil aside).

Place chicken in pan and cover with ingredients, turning on all sides.

Place the chicken on a rack about 6 inches above the coals and grill it,(place brick on top of chicken ) (compacts meat and enhances juiciness) turning it often and basting it with the remaining olive oil. Don't be surprised if the grease from the bird catches fire -- merely lift it out of the way until the flames subside.

Goes well with fresh arugula salad and grilled polenta.
