NOVI, Mich.(WXYZ) - One of Metro Detroit's premier vegetarian taste-fest events kicks off in Novi today.
The annual VegFest celebration features great Vegan cuisine, which you don't have to be vegan to enjoy. Also featured at this year's tastefest and expo are celebrity chef Tal Ronnen and former NBA great John Salley.
VegFest takes place Sunday, March 27, from 11am until 5pm at the Suburban Collection Showplace in Novi. Tickets are $10 for adults and $5 for students. You can get more information at www.vegmichigan.org.
Chef Tal Ronnen Recipe: Beefless soft tacos
Ingredients
1 bag of frozen Gardein Beefless Tips
6 small tortillas
For Marinade:
1/3 cup prepared green salsa
1 tablespoon chopped fresh cilantro
2 teaspoons fresh lime juice
1 teaspoon minced garlic
Pinch sea salt
Pinch black pepper
For Avocado Salsa:
3/4 cup prepared green salsa
1/2 avocado, diced
1 tbsp chopped fresh cilantro
1 tbsp chopped onion
2 teaspoons fresh lime juice
1/2 teaspoon minced garlic
For Taco Stuffing:
1 cup cooked corn
1 head shredded green cabbage or romaine lettuce
Directions
Defrost beefless tips for 5-10 minutes. Combine marinade ingredients. Cut tips in half and marinate for 20 minutes. Heat stainless steel sauté pan, add oil and sear beefless tips for 3 minutes on each side.
Meanwhile combine avocado salsa ingredients in medium bowl and set aside. Warm tortillas.
Put beefless tips in middle of tortilla with avocado salsa, lettuce, corn and fold. Garnish with your choice of green onions, shredded cheese, chopped fresh cilantro, lime wedges.
Makes 6 servings

Each taco is 180 calories and has 12 grams of protein, 6 grams fiber, 4 grams fat and 2 grams saturated fat, 34 grams carbohydrates and 350 micrograms sodium.
