Detroit (WXYZ) - Share something different with your family this Thanksgiving Day, and bring JoAnne Purtan's cucumber salad to the table.  It is a delicious, crispy and cool salad, that is both tart and sweet, and  is super easy to prepare, and super delicious to eat.  Enjoy!


JoAnne Purtan’s great-grandma’s recipe for Cucumber Salad

3 large cucumbers
1 cup sugar
1 cup vinegar (apple cider or white)
2 eggs
A couple pinches of salt

In pan, combine sugar, salt, vinegar and 2 eggs (beat the eggs first before adding to pan.) Cook over medium heat, stirring constantly until mixture begins to come to a boil.
Remove from heat and let cool. Place in refrigerator for at least a few hours. (Can easily be made the day before Thanksgiving)

Peel the cucumbers. Once peeled, score them. (Run a fork down the length of the cucumber until you’ve covered the whole cucumber. Then cut the cucumbers into thin slices.

Take mixture out of refrigerator, stir well and add cucumbers.

Serve cold & enjoy!
