Here are the recipes from the dishes on 7 Action News This Morning (Sunday).
Sweet Potato Waffles
Ingredients:
2 cups all purpose flour.
1 cup mashed sweet potatoes.
2 eggs - lightly beaten.
1/4 cup milk.
1/4 cup melted butter
3 tablespoons sugar.
2/3 teaspoon baking powder.
pinch of salt.
Cooking Directions:
Whisk together the milk, potatoes, butter & eggs.
In separate bowl, whisk together flour, sugar, baking powder and salt. Add dry ingredients to wet ones.
Stir well. Cook waffles at your favorite settings.
Yields 8 - 10 waffles.
Turkey Hash
Ingredients:
1 and 1/2 cups cooked turkey - shredded.
1/3 cup chopped celery.
1/3 cup chopped onion.
1/4 cup chopped bell pepper.
4 tablespoons butter.
1 tablespoon chopped parsley.
cup hashbrown potatoes.
1/4 teaspoon paprika.
salt & pepper to taste.
Cooking Directions:
In a large skillet, saute all the vegetables together in butter until they become limp.
Add the remaining ingredients and simmer, uncovered about 15 to 20 minutes or until gravy is mostly absorbed.
Shepherds Turkey Pie
Ingredients:
left over mashed potatoes.
salt & pepper to taste.
2 cups chicken broth.
1 tablespoon olive oil.
1/2 onion, chopped.
3 carrots, shredded.
1 1/2 pounds leftover Turkey.
1 1/2 cups frozen peas.
2 tablespoons Worcestershire Sauce.
Cooking Directions:
Pre heat oven to 400.
Spray a 9x12" baking dish with cooking spray.
Heat olive oil in large skillet, cook the onion & carrots.
Stir in turkey, peas, chicken broth & Worcestershire sauce.
Place mixture in baking dish. Top with mashed potatoes.
Bake the pie in the oven until the filling is bubbling about 25 minutes.
Brown the mashed potatoes under the broiler about 10 more minutes.
