(WXYZ) - Tracy Strieter-Mandrik, Regional Supervisor of Medical Weight Loss Clinic, appeared on Action News to talk about meals that are both delicious and healthy.
Here are the recipes.
Classy Baby Salad Recipe
Makes 4 servings
A mix of fruit and fresh seasonal vegetables with just the right hint of raspberry .
2 cups of baby greens lettuce
2 cups of baby spinach
1 cup of cherry tomatoes (sliced in 1/2)
1/2 medium cucumber (peeled, sliced and quartered)
1/2 yellow pepper (cut in slivers)
1 cup of strawberries (quartered)
1 cup of red onion (chopped)
3/4 cup of part-skim mozzarella cheese
4 oz of boneless skinless chicken breast
Mix all fruit and vegetable together then top with grilled chicken. Then finish by adding either lemon juice or your favorite low calorie raspberry vinaigrette salad dressing.
Healthy Potato Salad
Makes 6 servings
1 1/2 pounds new potatoes, quartered (about 4 1/2 cups)
1/2 cup Greek non - fat yogurt
1/4 cup finely sliced green onions
4 teaspoons Dijon style mustard
2 teaspoons honey
Dash ground black pepper
1. Cook potatoes in boiling water until tender; drain and rinse with cold water until potatoes are cool.
2. Mix yogurt, onions, mustard, honey, and pepper in large bowl.
3. Add potatoes; mix lightly. Refrigerate.
Caprice Salad
4 servings
2 medium red tomatoes, cut into wedges
2 medium yellow tomatoes, cut into wedges
3/4 cup diced fresh mozzarella cheese
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh basil
1/4 teaspoon salt
Freshly ground pepper, to taste
Gently toss tomatoes, mozzarella, parsley, basil and salt together in a large bowl. Season with pepper.
