Put kids in charge of the family fridge. Get them involved and they will lead the way to optimal wellness for the family.

Put Kids In Charge of the Family Fridge is one of the several classes offered at the Demonstration Kitchen inside of Henry Ford West Bloomfield Hospital.

Rainbow Quinoa

1.5 cups quinoa
2 tablespoons olive oil
1 cup peas
½ cup shredded carrots
½ cup raisins
Optional, on the table: salt and pepper

Bring 4 cups water to a boil in a large saucepan. Stir in the quinoa and reduce heat to medium. Simmer for about 20 minutes.

Stir the remaining ingredients into the quinoa and cook for approximately 5-10 more minutes, until the quinoa has opened into beautiful spirals. Fluff with a fork and serve immediately.

(Variations: Replace quinoa with couscous and reduce cooking time by 15 minutes. OR
Add ¼ cup chopped red pepper when adding the peas, carrots and raisins.)
