Lentil Lemon Spinach Soup Recipe:

1 Small White Onion (Medium Dice)

2 ribs Celery (Medium dice)

2 teaspoons Olive and Canola blended Oil

1 Tablespoon Fresh Garlic (Minced)

1 Tablespoon Dry Oregano

1 cup Fresh Chopped Spinach

½ pound Lentils

8 cup (1/2 gallon) Water or Vegetable stock

1 ½ Tablespoon Kosher Salt

1 teaspoon Fresh Milled Black Pepper

2 Tablespoon Fresh Lemon Juice
