Chef Joe Nader of Levy Restaurants at Ford Field brings us this recipe:
Grilled Chicken Bahn Mi:
Marinated Grilled Chicken
Pickled Daikon radish and carrot salad
Shaved seedless cucumbers
Fresh French Baguette
Marinated and Grill Chicken:
Sesame Oil – 1 cup
Sriracha – 1 T
Soy Sauce – 1 cup
Sambal Olek Garlic Chili Paste – 1 T
Minced Lemon Grass – 1 T
Minced fresh ginger – 1 T
Sweet chili sauce – ½ cup
Chop Green Onion – 2 each
Chop cilantro – ½ bunch
Skinless Chicken Thighs – 1 lb.
Combine all ingredients, marinate the chicken overnight, and grill fresh
Julienne Daikon Radish – 1 each
Julienne Carrot – 4 each
Sugar – 1 cup
Salt – 1 t.
Rice wine vinegar – 2 ½ cups
Dissolve salt and sugar in vinegar, place carrots in liquid and let sit overnight
Mayo – 1 cup
Sriracha - ½ cup
Assembly: Cut baguette in half, spread mayo on both sides of bread. On bottom half of bread place the grilled chicken thighs, and then sliced cucumbers, and then pickled salad, fresh cilantro leaves. Cut Sandwich in even pieces and enjoy!
