RECIPE: Pan roasted potato gnocchi pillows with fall field pumpkin

Pan Roasted Potato Gnocchi Pillows with Fall Field Pumpkin.
1 pound of gnocchi
1 cup unsweetened roasted pumpkin
½ cup heavy cream
6 tsp creamy goat cheese
1 shallot minced
3 cups fresh spinach
3 tbsp unsalted butter
1 red onion
Salt and Pepper to taste
Micro Greens to Garnish
Fresh Parmesan to taste
2 pounds potatoes (2 large russets)
1/4 cup egg, lightly beaten
1 cup of unbleached all-purpose flour

Fill a large pot with cold water. Salt the water, then cut potatoes in half and place them in the pot. Bring the water to a boil and cook the potatoes until tender.
Remove the potatoes from the water one at a time with a slotted spoon. Peel each potato quickly while it remains hot. Mash to a fine grain with the back of a fork.
Let the potatoes cool long enough that the egg won't cook when it is incorporated into the potatoes. Pour the beaten egg and sprinkle 3/4 cup of the flour across the top. Use a wooden spoon and scrape underneath and fold, scrape and fold until the mixture is a light crumble. Gently knead the dough. The dough should be moist but not sticky. Cut it into 8 pieces. Now gently roll each 1/8th of dough into a log, roughly the thickness of your thumb. Use a knife to cut pieces into 1 inch nuggets. Dust with a bit more flour.
start with a fresh pot (salted), and bring to a boil. Cook the gnocchi in batches by dropping them into the boiling water roughly twenty at a time. They are finished when they float to the top. Pull them out when they surface and place in a bowl of ice.
Strain and dry.
Pan sear in a non-stick pan to heat with oil and butter.
1 two pound pumpkin (like a golden hubbard)
1 tsp cumin
1 tsp coriander
1 tsp crack black pepper
Cut the top of the pumkin off. Remove seeds and rub with oil.
Sprinkle the spices inside and place lid back on top.
Roast at 400 until tender. Approximately 45 minutes.
Peel and smash 1 cup of pumpkin and stir into heavy cream.
Pick all clean and firm leaves.
Pan Fry until Crispy.
Pinch into nickel sized lumps.
Baby Spoon Spinach.
Pick through and rinse.
Crispy Red Onion.
1 red onion large
Peel and clean the red onion. Shave paper thin on a slicer and towel dry.
Dust with corn starch. Shake off excess. And fry at 300 until crisp.
