Cantoro Italian Market Symphony Cookies
8 eggs (8 ounces)
1 pound sugar
1 pound almond flour
1 tbsp vanilla extract
1 tbsp almond extract
1 c sliced almonds
1 bag chocolate chips
Preheat over to 375 degrees.
In a large bowl, combine 8 oz egg whites with sugar
Whisk until starts to become frothy
Add almond flour, vanilla and almond extract. Fold with spatula into the egg mixture until combined.
Place dough into a piping bag with a large star tip. Pipe cookies about 2 inches in diameter. Place your almonds on top the cookies and remove an excess if desired.
Bake approx. 12-14 minutes
Melt chocolate in a double boiler or microwave, stir chocolate often and be careful not to burn. When cookies are cooled dip in melted chocolate and store in an airtight container.
