Chef's Table XII preparing for grand opening in Farmington Hills

Chef's Table XII is one of metro Detroit's newest restaurants.

It's at the corner of 12 Mile and Orchard Lake in Farmington Hills and the grand opening is set for March 23 at 4:30 p.m.

Executive chef Travis Waynick and general manager Thomas Cupp offered 7 Action News a taste of two unique dishes.

Recipes:

Colorado Lamb Rack
Sous vide lamb, herbs, citrus, fingerling potato, tomato confit, sorrel, ruby port, tamarind paint

Tamarind Paint recipe:
2 cup red wine vinegar
1 1/2 cup brown sugar
5 tbs minced garlic
4 cup tamarind pulp
3 quart veal stock
Reconstitute tamarind pulp. Combine all in sauce pot and reduce until thickened (reduce by 60%). Blend smooth.

Blistered Shishito Peppers
Roasted tomato fondue with almonds, lemon, flake sake salt

Recipe tomato fondue:
4 quart Tomato Concasse
2 cup onion, diced small
4 tbs minced ginger
4 tbs minced jalapeño
4 tbs thyme
1 cup red wine vinegar
1 cup sugar
1/2 tsp chili flaske
1/2 tsp smoked paprika
1 tsp black pepper
Blanch and peel tomatoes. Small dice tomato. Combine all ingredients into large sauce pot. Cook over low heat until reduced by 75%
